Meatless Family Dinners
Three Bean Chili
Nobody at the table asks where the meat is. The mushrooms and the smoked paprika do that job.

Mushrooms and cocoa
Finely chopped mushrooms give meatless chili the savoury weight it otherwise lacks, and half a teaspoon of cocoa powder adds depth without tasting of chocolate. Both are doing real work.
How to make it
- Put all three tins of drained beans in the pot with the mushrooms, onion, pepper and garlic.
- Add the crushed tomatoes, tomato paste, chilli powder, cumin, paprika, oregano, cocoa, salt and pepper.
- Pour the broth over and stir everything together. Lid on.
- Low 7 hours or high 4 hours.
- Mash about a cup of the beans against the side and stir them back in to thicken it.
- Taste for salt, then serve with cheddar, sour cream, spring onion and chips.
Swap it
A cup of frozen corn or a diced sweet potato both work well in here. Leave the cheese and sour cream off and it is vegan.
