The tinned version has a flavour you cannot unlearn. This takes fifteen minutes more and tastes like a completely different food.

What goes in
- 2 lb ground beef, 85 percent lean
- 1 yellow onion, finely chopped
- 1 green bell pepper, finely chopped
- 4 cloves garlic, minced
- 1 cup ketchup
- 1/4 cup tomato paste
- 2 tbsp brown sugar 路 1 tbsp yellow mustard 路 1 tbsp Worcestershire sauce
- 1 tbsp apple cider vinegar 路 1 tsp chilli powder
- 1 1/2 tsp salt 路 1 tsp black pepper
Stir in at the end
- 6 soft burger buns, toasted
- dill pickle slices, to serve
Brown and drain first
Ground beef added raw sits in its own grease for four hours and the sauce never tightens. Brown it in a pan and pour the fat off.
How to make it
- Brown the ground beef in a hot pan, breaking it up as it goes, about 8 minutes. Drain off the fat.
- Tip the beef into the pot with the onion, pepper and garlic.
- Stir in the ketchup, tomato paste, brown sugar, mustard, Worcestershire, vinegar, chilli powder, salt and pepper. Lid on.
- Low 4 hours or high 2 hours.
- Lid off the last 20 minutes so it thickens up and stops running out of the bun.
- Spoon onto toasted buns with pickle slices.
Swap it
Ground turkey works, add a spoon of oil since it is lean. A dash of liquid smoke makes it taste like it came off a grill.
