Pork
Sausage, Peppers and Onions
Fair food at home. Brown the sausages first, because pale boiled sausage is not something anyone wants to look at.

Pot6 qt
What goes in
- 2 1/2 lb Italian sausages, sweet or hot
- 2 tbsp olive oil
- 3 bell peppers, red, yellow and green, sliced thick
- 2 yellow onions, sliced thick
- 5 cloves garlic, sliced
- 14 oz crushed tomatoes
- 1/2 cup chicken broth
- 2 tsp dried oregano 路 1 tsp dried basil 路 1/2 tsp chilli flakes
- 1 1/2 tsp salt 路 1 tsp black pepper
Stir in at the end
- 6 hoagie rolls, split and toasted
- grated provolone, to serve
How to make it
- Brown the sausages in the hot oil, turning, about 8 minutes. They do not need to cook through.
- Put the peppers, onions and garlic in the pot and sit the sausages on top.
- Stir the crushed tomatoes, broth, oregano, basil, chilli flakes, salt and pepper together and pour it over. Lid on.
- Low 5 hours or high 3 hours.
- Lid off the last 30 minutes to reduce the sauce, or it will soak the rolls.
- Pile into toasted hoagie rolls with provolone over the top.
Swap it
Serve it over polenta or pasta instead of in a roll. Chicken sausages work and need an hour less.
