Brown lentils, not red
Red lentils collapse into puree within three hours. Brown or green lentils hold their shape and give you the texture this needs. They are not interchangeable here.
How to make it
- Rinse the lentils and put them in the pot with the onion, pepper, grated carrot and garlic.
- Stir in the ketchup, tomato paste, brown sugar, mustard, vinegar, paprika, chilli powder, salt and pepper.
- Pour the broth over and stir. Lid on.
- Low 6 hours or high 3 hours, until the lentils are tender but still whole.
- Lid off the last 30 minutes so it thickens enough to sit in a bun.
- Taste for salt and vinegar, then spoon onto toasted buns with pickles.
Swap it
A tablespoon of soy sauce adds savoury depth. Serve it over baked potatoes from recipe 44 instead of in buns.
