Honey Mustard Pork Tenderloin
Tenderloin is lean, so this is the short cook in the pork chapter. Four hours, not eight, or it goes to chalk.

What goes in
- 2 pork tenderloins, about 1 1/4 lb each
- 2 tbsp olive oil
- 1/3 cup honey
- 1/3 cup wholegrain mustard
- 2 tbsp Dijon mustard
- 1/2 cup chicken broth
- 4 cloves garlic, minced
- 1 tsp dried rosemary
- 1 1/2 tsp salt 路 1 tsp black pepper
Stir in at the end
- 2 tbsp cornstarch
- 2 tbsp cold water
Lean meat, short cook
Tenderloin has almost no fat or connective tissue, so it does not improve with time the way shoulder does. It is done at four hours on low and dry at six.
How to make it
- Season the tenderloins with the salt and pepper and sear them in the hot oil, about 2 minutes a side, until browned all over.
- Whisk the honey, both mustards, broth, garlic and rosemary together.
- Put the tenderloins in the pot and pour the sauce over. Lid on.
- Low 4 hours or high 2 hours, until they read 145F at the thickest point.
- Lift them out and rest 10 minutes before slicing, or the juice runs out onto the board.
- Whisk the cornstarch slurry into the sauce and cook 10 minutes on high, then spoon it over the slices.
Swap it
Pork loin, a different and larger cut, needs 6 hours on low. Maple syrup instead of honey works well with the mustard.
