What goes in
- 2 lb frozen corn kernels, no need to thaw
- 8 oz cream cheese, cubed
- 1/2 cup butter, one stick, cut in pieces
- 1/2 cup heavy cream
- 2 tbsp granulated sugar
- 1 tsp salt 路 1/2 tsp black pepper
Stir in at the end
- 1/2 cup grated parmesan
- 2 tbsp chives, snipped
Frozen corn beats fresh here
Frozen corn is picked and frozen at peak sugar, and it holds its bite through four hours. Fresh corn out of season is starchy, and tinned corn goes soft and watery.
How to make it
- Tip the frozen corn into the pot straight from the bag.
- Scatter the cream cheese cubes and butter pieces over it.
- Pour the cream over and add the sugar, salt and pepper. Lid on.
- Low 4 hours or high 2 hours.
- Stir well, which is when the cream cheese and butter come together into the sauce.
- Stir in the parmesan, taste for salt, and finish with chives.
Swap it
A diced jalapeno and a cup of cheddar makes a hotter version. Half the sugar if you do not want it sweet.
