Country-Style Ribs
Country-style ribs are not really ribs, they are cut from the shoulder. That is why they go so tender in a slow cooker.

Pot6 qt
What goes in
- 4 lb boneless country-style pork ribs
- 2 tbsp brown sugar 路 1 tbsp smoked paprika
- 2 tsp salt 路 1 tsp black pepper 路 1 tsp garlic powder 路 1 tsp onion powder
- 1 yellow onion, sliced
- 1/2 cup chicken broth
- 2 tbsp apple cider vinegar
Stir in at the end
- 1 1/2 cups barbecue sauce
Finish them under the grill
Slow cookers cannot caramelise. Brush the ribs with sauce, grill them 6 to 8 minutes until the edges char and the sauce tacks up, and they go from good to worth making again.
How to make it
- Mix the brown sugar, paprika, salt, pepper, garlic powder and onion powder and rub it into the ribs.
- Scatter the onion in the pot, lay the ribs over it, and pour the broth and vinegar around the edge. Lid on.
- Low 8 hours or high 5 hours, until they give completely to a fork.
- Lift them carefully onto a foil-lined tray. They will be fragile.
- Brush generously with barbecue sauce and grill 6 to 8 minutes until the sauce is tacky and the edges catch.
- Brush with a second coat and serve.
Swap it
Bone-in country-style ribs have more flavour, same timing. Baby back ribs work too but need cutting into sections to fit.
