Pot6 qt
What goes in
- 3 lb boneless skinless chicken thighs
- 2 cups chicken broth
- 1 yellow onion, sliced thin
- 2 tsp onion powder 路 1 tsp garlic powder
- 1 tsp dried thyme 路 1 tsp salt 路 1/2 tsp black pepper
- 2 tbsp butter
Stir in at the end
- 3 tbsp cornstarch
- 3 tbsp cold water
Thicken at the end
Cornstarch stirred in at the start breaks down over a long cook and the gravy goes thin. Make the slurry and add it in the last fifteen minutes.
How to make it
- Lay the thighs in the pot and scatter the onion over them.
- Season with the onion powder, garlic powder, thyme, salt and pepper, pour the broth around the edge, dot the butter on top. Lid on.
- Low 7 hours or high 4 hours.
- Shred the chicken in the pot with two forks and turn it to high.
- Whisk the cornstarch into the cold water until there are no lumps, then stir it through the liquid.
- Lid on, 15 minutes, until the gravy coats a spoon. Taste and salt again if it needs it.
Swap it
Breasts work, drop to low 6 hours. For a deeper gravy use half broth and half beef broth.
