What goes in
- 4 lb sweet potatoes, peeled and cut into 1 inch rounds
- 3/4 cup brown sugar, packed
- 1/2 cup butter, one stick, cut in pieces
- 1/4 cup maple syrup
- 1/4 cup orange juice
- 1 tsp ground cinnamon 路 1/2 tsp ground nutmeg 路 1/4 tsp ground cloves
- 1/2 tsp salt
- 1 tsp vanilla extract
Stir in at the end
- 2 cups mini marshmallows, optional
- 1/2 cup chopped pecans, optional
Marshmallows in the last fifteen
Marshmallows added at the start dissolve completely into the syrup and you are left wondering where they went. Fifteen minutes with the lid on puffs them up and leaves them whole.
How to make it
- Put the sweet potato rounds in the pot.
- Stir the brown sugar, maple syrup, orange juice, cinnamon, nutmeg, cloves and salt together and pour it over.
- Dot the butter across the top. Lid on.
- Low 4 hours or high 2 hours 30, until tender but still holding their shape. Stir once gently halfway if you are around.
- Stir in the vanilla.
- Scatter the marshmallows and pecans over, lid on for 15 minutes, then serve from the pot.
Swap it
Leave the marshmallows off and it is a proper side rather than a dessert. A pinch of cayenne cuts the sweetness surprisingly well.
