Pot6 qt
What goes in
- 3 lb boneless skinless chicken breasts
- 1 1/2 cups barbecue sauce
- 1/4 cup apple cider vinegar
- 2 tbsp brown sugar
- 1 tbsp Worcestershire sauce
- 1 tsp smoked paprika 路 1 tsp garlic powder
- 1/2 tsp salt 路 1/2 tsp black pepper
Stir in at the end
- 1/2 cup barbecue sauce, held back
- 6 soft burger buns
- dill pickle slices, to serve
Hold back half a cup
Sauce cooked for six hours loses its edge. The reserved half cup stirred in at the end puts the bright tang back.
How to make it
- Put the chicken in the pot.
- Whisk the barbecue sauce, vinegar, brown sugar, Worcestershire, paprika, garlic powder, salt and pepper together and pour it over. Lid on.
- Low 6 hours or high 3 hours.
- Shred in the pot with two forks.
- Stir through the reserved barbecue sauce and leave the lid off for 15 minutes so it tightens up.
- Pile onto buns with pickle slices.
Swap it
Thighs give a richer sandwich, same times. A spoon of chipotle in adobo turns it smoky and hot.
